How do I keep a man interested without playing games?

When I first meet a bloke they're really keen and in a way, I'm the one who calls the shots. When I start dating them, it changes. I start being the one doing the calling and they seem to have the upper hand.

I don't know if I'm not very good at playing hard to get, but how do I keep them interested without playing games? They always seem to think they've got me where they want me after a short time.
