Beef Meatballs with Oxtail
Description
A real hearty winter treat. Either make the meatballs by hand, or just buy them from the supermarket for a quick and easy meal. You can buy canned potatoes that contain no salt or sugar.
Ingredients
400g can oxtail soup
200g can butterbeans, drained
300g can potatoes, drained and cut in half
1 Tbsp oil
1 onion, chopped
12 meatballs
Method
1. Preheat your oven to gas mark 6, 200°C or for a fan oven 180°C.
2. In a heatproof and flameproof casserole dish, heat the oil and then fry the onion for about five minutes until it is soft and golden.
3. Add meatballs and fry for a further five minutes until they are browned.
4. Stir in the soup, butterbeans and potatoes.
5. Bring to the boil, cover and then place in the oven for 25 minutes.
